Simple vegetable and cheese frittata

Looking for way to sneak in some extra veggies into your dinners? Why not try this delicious vegetable-packed frittata with mouthwatering soft cheese.

Not only does it taste absolutely delicious but it’s much healthier and has far fewer carbs than other dinner options.


  • 100g chopped streaky bacon
  • 1 tbsp olive oil
  • 2 large zucchini, cut into chunks
  • 350g frozen sweetcorn
  • 400g frozen spinach, defrosted and drained
  • 8 eggs
  • 150g pack soft cheese with garlic and herbs


  1. Fry bacon in oil in large non-stick frying pan until starting to brown. Add zucchinis. Fry for a couple of minutes or until they begin to soften. Add sweetcorn and spinach, season if you like, then heat through.
  2. Heat grill to medium. Beat eggs. Pour over vegetables. Crumble over cheese.
  3. Cook gently until egg has just set around the edges. Slide frittata under grill. Cook until egg is set and top is lightly browned. Cut into wedges and serve with a simple green salad.
