Looking for way to sneak in some extra veggies into your dinners? Why not try this delicious vegetable-packed frittata with mouthwatering soft cheese.
Not only does it taste absolutely delicious but it’s much healthier and has far fewer carbs than other dinner options.
Ingredients
- 100g chopped streaky bacon
- 1 tbsp olive oil
- 2 large zucchini, cut into chunks
- 350g frozen sweetcorn
- 400g frozen spinach, defrosted and drained
- 8 eggs
- 150g pack soft cheese with garlic and herbs
Method
- Fry bacon in oil in large non-stick frying pan until starting to brown. Add zucchinis. Fry for a couple of minutes or until they begin to soften. Add sweetcorn and spinach, season if you like, then heat through.
- Heat grill to medium. Beat eggs. Pour over vegetables. Crumble over cheese.
- Cook gently until egg has just set around the edges. Slide frittata under grill. Cook until egg is set and top is lightly browned. Cut into wedges and serve with a simple green salad.
