If you’re getting bored of the usual flavours when it comes to sweet loaf recipes, but are still looking for something sweet to whip up amid the ongoing pandemic, then you have to try this unique twist on classic banana bread. If you haven’t tried it before then you’re definitely in for a treat!
While the flavours work so well together, the best part is definitely the delicious lime glaze that is perfectly drizzled over the top! Enjoy this tasty sweet treat with a hot cuppa in the afternoon and you’re good to go!
Ingredients
- 1 banana, unpeeled
- 100g unsalted butter, softened
- 1 cup (220g) caster sugar
- 1 tsp vanilla paste
- 2 eggs
- 1/4 cup (60ml) buttermilk
- 1 1/3 cup (200g) self-raising flour
- 1/2 tsp bicarbonate of soda
Lime icing
- Juice of 2 limes
- 1 vanilla bean, split, seeds scraped
- 1 1/2 cups (180g) pure icing sugar, sifted
Method
- Preheat the oven to 200C. Grease and line a 1.5L loaf pan with baking paper. Place unpeeled banana on a baking tray. Bake for 15 minutes, then set aside until cool enough to handle. Remove skin and discard, then mash flesh with a fork.

- Reduce oven to 160C. Beat butter and sugar in a stand mixer until thick and pale. Add mashed banana, vanilla paste, eggs and milk. Beat to combine. Fold in sifted flour and bicarb soda.
- Spread batter into pan and bake for 50 minutes or until a skewer inserted into the centre comes out clean. Set pan aside for 5-10 minutes on a wire rack, then invert and set aside to cool.
- For the icing, combine lime juice, vanilla seeds and icing sugar in a bowl, stirring until smooth. Pour lime icing over cooled banana bread to serve.
