Ingredients
- 3 eggs
- 375 ml milk
- 250ml thickened cream
- 40 g unsalted butter, melted and cooled
- 110g white sugar
- 1 tsp cinnamon powder
- 1 tsp vanilla extract
- 7 heaped cups white bread, preferably slightly stale, cut into 2.5cm pieces
- 1 cup sultanas
Topping
- 30 g unsalted butter, melted
- 20 g unsalted butter, melted – for brushing post baking
- Icing sugar, for dusting
Method
- Preheat oven to 180C. Place eggs in a large bowl, whisk briefly. Whisk in milk, thickened cream, butter, sugar, cinnamon and vanilla. Add bread and sultanas, briefly mix, then set aside for 3 minutes to allow egg mixture to soak through bread.
- Pour into a 10 cup or 2.5 litre baking dish. Poke in excess sultanas into the mixture a bit. Drizzle over 2 tbsp melted butter. Bake for 20-25 minutes or until golden on top and the inside is set but still slightly wobbly.
- Brush with remaining 1 1/2 tbsp melted butter. Dust with icing sugar. Serve immediately, with toppings of choice.
