Spicy chickpea fritter

Somedays you just can’t really be bothered to cook up a lavish meal or spend the money or time it requires to enjoy something gourmet. But these mouthwatering chickpea fritters are the perfect low-maintenance option!

Not only are they quick and easy to whip up in less than half an hour with just six budget-friendly ingredients – but you won’t have to skimp on flavour just to save on time! Thanks to the hints of spice and herbs, this flavourful meal definitely won’t disappoint!


  • 400g can chickpeas, drained, rinsed
  • 1/3 cup fresh coriander leaves
  • 1/2 cup self-raising flour
  • 3 eggs
  • 2 tablespoons korma curry paste
  • 1 tablespoon rice bran oil


  1. Place chickpeas and coriander in a food processor. Process until chopped and just combined. Add flour, eggs and curry paste. Process until just combined. Transfer mixture to a bowl. Season with salt and pepper.
  2. Heat oil in a large, non-stick frying pan over medium-low heat. Add 1/4 cup chickpea mixture to pan. Spread slightly with a spatula. Repeat to make 3 more fritters. Cook for 2 to 3 minutes each side or until golden and cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture. Serve with tzatziki and salad leaves.
