Saturday night silverside with honey sauce

This delicious meal takes little-to-no preparation and best of all you can do it in your slow cooker! I made this one for the family recently and they said it’s possibly the best silverside they’ve ever eaten. If you have leftovers, you can use them for sandwiches or a little macaroni cheese dish, like I did. How clever!

Serves 4-6

Ingredients

SILVERSIDE

  • 1 silverside corned beef
  • 1 cup sugar
  • 1 cup vinegar (I used apple cider, but white is also fine)
  • 2 bay leaves (or 8 whole cloves)
  • 1 litre of water (enough to cover the meat)

HONEY SAUCE

  • 1 cup pot juice
  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 1 tsp mustard
  • 2 tsp cornflour

Method

  1. Place all silverside ingredients into a pot (or slow cooker) and pour in enough water to cover the meat (this may be more or less than 1 litre, depending on the size of your pot/slow cooker).
  2. Cook on low (slow) for roughly 6 hours.
  3. For the honey sauce, place 1/2 cup pot juice, vinegar and sugar into a saucepan and bring to the boil.
  4. Add mustard and cornflour and mix together well.
  5. The sauce should thicken to a gravy-like consistency.

When the silverside is tender and your sauce is ready, serve and enjoy!
