Delicious self-saucing butterscotch pudding

Looking for a quick and easy dessert dish to serve up? Give this delicious self-saucing pudding a go! Butterscotch is a true family classic when you’re after a change away from popular flavours like chocolate and vanilla, and it goes perfectly in this dessert.

This dish is perfect for entertaining guests or for bringing along to an event. Don’t forget to top each slice off with a generous scoop of vanilla ice cream or whipped cream and you’re good to go!

Ingredients

  • 3/4 cup brown sugar
  • 1 1/4 cups (190g) self-raising flour
  • 100g butter, melted
  • 1 egg
  • 1/2 cup (125ml) milk
  • 4 tablespoons golden syrup
  • 1 tablespoon cornflour
  • 1 1/2 cups (375ml) boiling water

Method

  1. Preheat oven to 180C. Grease a 1.5 litre ovenproof dish. Add 1/4 cup of the brown sugar and all of the flour to a bowl. Stir to combine. Add melted butter, egg, milk and 2 tablespoons of the golden syrup and stir until combined. Spoon into greased dish.
  2. Combine remaining 1/2 cup of brown sugar and cornflour. Sprinkle over the pudding mixture.
  3. Combine boiling water with the remaining 2 tablespoons of golden syrup. Pour over the top of the pudding mixture and bake for 40-45 minutes or until a skewer inserted into the centre comes out clean. Serve.
