If you need to bake for a large group of people, you just can’t go past this ultimate crowd pleaser. Caramel slice is a recipe that has definitely stood the test of time and for good reason!
This low-effort slice is not only absolutely delicious but it’s also fairly straight forward considering the fact that there is in fact three layers involved. Serve it up alongside a scoop of vanilla ice cream and you’re good to go!
Ingredients
- Base
- 1 cup plain flour, sifted
- 1/2 cup brown sugar
- 1/2 cup desiccated coconut
- 125g butter, melted
- Filling
- 395g can sweetened condensed milk
- 2 tablespoons golden syrup
- 60g butter, melted
- Topping
- 125g cooking chocolate, chopped
- 60g copha, chopped (solid oil cooking block)
Method
- Preheat oven to 180C. Line a 3cm deep, 28cm x 18cm lamington pan with baking paper. In a large bowl add flour, brown sugar, coconut and butter. Mix together well. Spoon into prepared pan and press down to mould the base. Bake for 15-20 minutes until lightly golden. Remove from oven. Leave to cool.
- Meanwhile for filling, in a saucepan over medium heat, add condensed milk, golden syrup and butter. Whisk and cook for 8 minutes or until mixture is golden. Pour over cooled base. Bake for 12 minutes or until filling is firm. Leave to cool completely. Chill for 3-4 hours in refrigerator to completely set.
- For topping, add chocolate and copha into a heat-proof bowl. Place bowl over a saucepan of simmering water. Stir mixture until completely melted. Pour over caramel mixture. Chill in refrigerator until completely set. Slice into squares. Serve.
