Super simple and delicious mini baked cheesecakes

Next time you have a handful of guests, why not try something new and give this delicious recipe a go? It’s perfect for making in bulk and serving up at parties or low-key lunch get-togethers as the cheesecakes are easy to whip up but still hold that beautiful flavour.

With just seven super-simple ingredients, you won’t believe how fuss-free these cheesecakes are. These are also a great excuse to bring younger family members into the kitchen for some extra helping hands as well as some fun bonding time!

Ingredients

  • 250g cream cheese, at room temperature
  • 1/2 cup (110g) caster sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 2 eggs
  • 6 sweet biscuits
  • Berries, to serve

Method

  1. Preheat oven to 180C. Line 6 large muffin pans each with 2 paper cases. Use electric beater to beat together cream cheese, sugar, vanilla and lemon juice until light and creamy. Beat in eggs one at a time.
  2. Place one biscuit in base of each muffin case, pressing down firmly (may need to break to fit). Top with cream cheese mixture. Bake for 20 minutes or until slightly risen and just beginning to crack a little on the surface.
  3. Set aside in pan for 10 minutes, before placing on a wire rack to cool completely. Refrigerate for 1 hour or until chilled. Top with fresh berries. Serve.
