Almond, cranberry and white chocolate biscuits

These gluten-free biscuits are so light, sweet and chewy. They are very easy to make and will pair nicely with a cuppa with friends. Enjoy!



  • 1 cup almond meal
  • 1/2 cup desiccated coconut
  • 1/4 cup white sugar
  • 100g butter
  • 1 egg
  • 1/4 cup chocolate, chopped
  • 1/4 cup slivered almonds
  • 1/4 cup dried cranberries, chopped


  • 1 cup white chocolate
  • 1 tbsp pouring cream


  1. Preheat oven to 180C. Mix all biscuit ingredients together in a bowl.
  2. Roll walnut-sized portions into balls, press flat in palms and tidy edges to make perfect-looking biscuits.
  3. Place on a lined and greased baking tray. Bake for approximately 10 minutes or until biscuits are golden brown.
  4. Leave on the tray to cool completely.
  5. For the topping, melt chocolate in the microwave in 30-second bursts. Combine cream and stir well. Spread on top of cooled biscuits.
