Simple veggie-packed pasties

This is one of the quickest and tastiest ways to fit a whole bunch of veggies into one easy dish. Not only is the recipe super simple, but the flavour and texture of the overall dish is the perfect comfort food for a busy week!

It’s something that can be made quickly and easily with little mess thanks to the help of the food processor which removes all the struggles of chopping and dicing veggies. And if you want to scrape even more time off the method – simply buy pre-made pastie cases and you’re good to go in no time at all!

Ingredients

  • 3 potatoes medium
  • 1 carrot large
  • 1 turnip large
  • 1 onion small
  • 350g lean beef mince
  • 1/2 cup frozen peas and corn
  • 1 tbs Worcestershire sauce
  • 2 tbs parsley chopped
  • 1/2 tsp salt
  • 2 tbs all peppered seasoning
  • 6 sheets puff pastry frozen
  • 1 egg lightly beaten
  • 3 tsp sesame seeds

Method

  1. Preheat oven to 200C. Peel potatoes, carrot, turnip and onion. Process in food processor until shredded.
  2. In bowl, combine mince, vegetables, peas, corn, Worcestershire sauce, parsley and seasonings. Mix thoroughly to combine.
  3. Cut pastry into 15 cm rounds. Place some mixture in centre of each round. Brush edge of pastry with some beaten egg. Lift two sides of the circle together on top of the vegetables. Pinch together to make frill.
  4. Place on baking sheet. Brush top with beaten egg. Sprinkle with seeds. Bake for approximately 30 minutes or until golden brown. Leave to cool slightly. Serve with sauce of your choice.
