The popularity of the air fryer is showing no signs of slowing down and with tasty recipes like this on offer, it’s no wonder why. With just a handful of ingredients and a super-simple method, these sausage rolls make a delicious lunch served with salad, or a great snack when you have the grandkids over for a visit. Serve them up with some sweet chilli or tomato relish for dipping and you’ll be good to go!

Ingredients
- 500g pork mince
- 1 Granny Smith apple, peeled, grated
- 1/2 cup grated vintage cheddar
- 2 green onions, chopped
- 2 garlic cloves, crushed
- 2 tbsp chopped fresh flat-leaf parsley
- 2 tsp fresh thyme leaves
- 2 eggs, lightly beaten
- 3 sheets frozen puff pastry, partially thawed
- 4 tsp sesame seeds
Method
- Place mince, apple, cheddar, onion, garlic, parsley, thyme and half the egg in a bowl. Season with salt and pepper. Mix well to combine.
- Place one sheet of pastry on a flat surface. Cut in half to form two large rectangles. Leaving a 1cm edge, spoon 1/3 cup mince mixture along one long side of each piece of pastry. Brush edges with a little of the remaining egg. Roll up pastry to enclose filling. Trim ends. Cut each roll into 3 pieces. Place rolls, seam-side down, on a baking paper-lined tray. Repeat with pastry, mince and egg.
- Brush tops of rolls with egg. Score lines into the tops of rolls with a small knife. Sprinkle with sesame seeds. Season with salt and pepper.
- Preheat air fryer to 200C. Cook sausage rolls, in batches, for 10 to 12 minutes or until golden and puffed. Serve.
