After dinner choc-mint truffles

Do you ever get that feeling after dinner that a little something ‘sweet’ could be required? These super easy vegan chocolate mint truffles are the perfect treat!

They use simple ingredients and are gluten, dairy and refined sugar free. They are also delicious.

Here’s a surprise though, you won’t be using actual chocolate in these truffles. I’m picturing a confused expression on your face that matched mine when I first hear about this. I haven’t lost the plot… Yet. You’re going to need coconut oil, maple syrup, salt, water and … cocoa powder. What we create is magic.

Makes 20

Ingredients

  • 1/2 cup coconut oil
  • 1/4 tsp fine sea salt
  • 1/4 cup maple syrup
  • 1 cup cocoa powder, plus extra for rolling
  • 1/4 tsp peppermint extract
  • 6 1/2 tsp cold water

Method

  1. Melt coconut oil in a pot on low heat, then transfer it to a bowl.
  2. Add salt and maple syrup, and whisk until evenly distributed in coconut oil.
  3. Add cocoa powder and peppermint extract and whisk thoroughly.
  4. While constantly whisking, add cold water a 1/2 teaspoon at a time.
  5. Cover bowl with cling film and put into the freezer for 30 minutes or until chocolate mixture is set solid.
  6. Remove from freezer. Your chocolate should be solid but malleable.
  7. Spoon 1 tablespoon of the mixture and form into a round truffle with your hands.
  8. Roll truffles in cocoa powder.
  9. Keep truffles in fridge or in a cool dry place for up to a week. You can also keep in the freezer for up to a month.
