Delicious banana, honey and cinnamon muffins

If you’re on the hunt for something a bit lighter as your new afternoon tea snack, why not give these mouthwateringly good banana muffins a go! With just a few super simple and budget-friendly ingredients that you probably already have lying around in your kitchen, you can whip these up in no time at all!

You can definitely use these treats as an afternoon tea treat however they’re also perfect to pop in a container and enjoy on the go. And if you don’t finish them all straight away, don’t worry as you can also pop them in the freezer to be enjoyed at a later date. Yum!

Ingredients

  • Melted butter, for greasing
  • 2 cups (300g) self-raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • Pinch salt
  • 1/2 cup brown sugar
  • 75g butter, melted
  • 1/2 cup (125ml) milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1 cup (about 2 bananas) mashed banana

Method

  1. Preheat oven to 180C. Grease 12 x 1/3 cup (80ml) muffin pans with melted butter or line with paper cases.
  2. Sift flour, baking powder, bicarbonate of soda, cinnamon and salt into a large bowl. Stir in sugar.
  3. Combine melted butter, milk, honey, vanilla, eggs and mashed 3. banana in a large jug. Whisk until well combined.
  4. Make a well in the centre of dry ingredients. Add egg mixture, stir until just combined (do not overmix). Spoon mixture into muffin pans. Bake for 20 minutes or until cooked through when tested with a skewer. Cool in pans for 5 minutes, turn onto a wire rack to cool.
