Quick and easy traditional meatloaf

Even as the evenings begin to get warmer, comfort foods are still irresistible at the end of a long day, and this traditional meatloaf is by far one of the best!

This tasty option will instantly become one of your favourites for a whole number of reasons, from the quick and easy method to the super delicious flavours. And, with just nine ingredients, you won’t even have to worry about the budget when digging into this tasty meal. Enjoy!

Ingredients

  • 2 slices fresh white bread, crusts removed
  • 500g pack minced pork
  • 1 onion, roughly chopped
  • 1 garlic clove, roughly chopped
  • big handful of parsley
  • 1 tbsp fresh chopped oregano or 1 tsp dried
  • 4 tbsp freshly grated parmesan
  • 1 egg, beaten
  • 8 slices prosciutto

Method

  1. Heat oven to 190C. Put bread in processor. Process to make crumbs. Tip into bowl with pork.
  2. Tip onion, garlic and herbs into food processor. Process until finely chopped. Add to separate bowl with parmesan and egg. Finely chop 2 slices of prosciutto. Add to mix with salt and pepper. Mix well.
  3. Use the rest of prosciutto to line a 1.5 litre loaf tin. Spoon in meatloaf mix. Press down well. Flip overhanging prosciutto over top. Put loaf tin into roasting tray. Pour hot water into roasting tray to come halfway up the loaf tin. Bake for 1 hr until loaf shrinks from sides of tin.
  4. Cool in tin for 10 mins. Drain off any excess liquid. Turn out onto a board. Cut into thick slices and serve warm or cold.
