Sweet potato and ham fritters

Who doesn’t love a good fritter? These healthy little patties are packed with veggies and skip the cheese that usually adds so many unhealthy calories. The sweet potato is low-GI and has heaps of Vitamin C, while the shaved ham and dijon mustard bring all the great flavours. Serve yourself two or three and plate them up with a nice side salad or some steamed veggies. Note: They’re great with chutney, too!

Ingredients

  • 500g sweet potato, peeled, grated
  • 200g shaved leg ham, chopped
  • 5 spring onions, thinly sliced
  • 1/2 cup chopped fresh flat-leaf parsley leaves
  • 1 tablespoon Dijon mustard
  • 1/3 cup plain flour
  • 1 large egg, lightly beaten
  • 1 tablespoon olive oil
  • Salt and pepper, to season

Method

1. Preheat oven to 170C/150C fan-forced. Place a wire rack over a baking tray lined with baking paper. Place potato, ham, onion, parsley, mustard and flour in a large bowl. Stir to combine. Season with pepper. Stir in egg. Season with salt and pepper to taste.

2. Heat half the oil in a large non-stick frying pan over medium-high heat. Place 1/4 cup mixture into the pan, and flatten slightly. Repeat to make four fritters. Cook for 3 to 4 minutes on each side or until cooked through. Transfer fritters to prepared tray. Place in oven to keep warm. Repeat to make a total of 12 fritters.

3. Serve fritters with salad and chutney.
