Creamy spinach bites

Creamy spinach bites, ready to go in the oven!

These little cheesy and spinach savoury pastries are excellent for a lunch, or simply to have on hand for a snack at anytime. They’d also make great finger food for a party or function, and are a great vegetarian alternative to sausage rolls! 

With few ingredients and not a lot of prep time, they’re quick and easy to make, too. 

You can make them ahead of time and keep in an airtight container in the fridge to take for lunch on the go, and are very little effort. 

Ingredients

  • 2 sheets frozen puff pastry, thawed
  • 1/4 teaspoon garlic powder
  • 1 250g package of frozen spinach, thawed and drained
  • 1/4 onion, finely chopped
  • 1 egg
  • 200g cream cheese, softened 
  • 200g grated mozzarella

Method

1. Preheat oven to 200C and line 2 oven trays with baking paper.

2. Lightly beat together the egg and water.

3. Combine cream cheese, Mozzarella, garlic powder, and onion in a bowl and mix well. Stir in drained spinach.

4. Use a pastry brush to brush both sides of the puff pastry sheets with the egg and water mixture, then spread evenly with the cheese and spinach mixture.

5. Roll up the pastry sheets, then slice into approximately 3cm thick rounds.

6. Place on baking trays and bake for 20 minutes or until pastry is golden brown. Serve warm.
