This healthier meal is absolutely ideal as a light lunch or dinner on those evenings when you just can’t face something as heavy as pasta or rice. These Moroccan-inspired turkey meatballs are not only bursting with exotic flavours – but they’re also super easy to whip up in little to no time at all!
And although they are definitely the stars of the show, the cous cous isn’t far behind with it’s light and easy citrus blend and refreshing flavour! Whip this up fresh or pop the meatballs in the fridge for two days to enjoy at a later date. Yum!
Ingredients
- 500g turkey mince
- 2 tsp each chilli powder, ground cumin and ground coriander
- 1 tsp cinnamon
- 1 onion, coarsely grated
- zest 1 orange, then peeled and orange segments chopped
- 250g couscous
- 250ml hot chicken stock
- 2 tsp olive oil
- small bunch coriander, roughly chopped
Method
- In big bowl, mix mince, spices, onion and orange zest together really well with hands. Roll mixture into about 20 meatballs.
- Put couscous in bowl, pour over hot chicken stock, cover with cling wrap and leave to stand for 10 mins.
- Heat olive oil in frying pan. Add meatballs and fry, turning often, for about 12 mins until browned all over and cooked through.
- Fluff couscous up with fork, stir in chopped orange, coriander and some seasoning. Pile onto plates and serve with the meatballs.
