Easy three-ingredient cream cheese biscuits

If you’re after a fairly straightforward biscuit recipe, then you can’t go past these deliciously good treats! With just three ingredients that you probably already have lying around in your kitchen, plus just over an hour of time spent in the kitchen, you can serve up these tasty bites with minimal effort.

They’re fantastic for packing up and taking to a picnic lunch or for simply popping in an airtight container and enjoying alongside a hot cuppa. So, try these next time you’re craving some freshly baked biccies on the go!

Ingredients

  • 230g full fat cream cheese, softened
  • 2/3 cup butter, softened
  • 1 cup self-rising flour, plus more for dusting

Method

  1. Combine cream cheese, butter and flour in a food processor bowl. Pulse together until combined, stopping to scrape down sides halfway through. Turn out onto lightly floured work surface. Shape into a disc. Carefully wrap in lightly floured baking paper. Chill in refrigerator about 1 hour.
  2. Place oven rack on highest rung. Preheat oven to 220C. Line large baking tray with baking paper. Sprinkle work surface with flour. Unwrap dough. Sprinkle top and rolling pin lightly with flour. Roll out to 1-2cm thick. Use circular biscuit cutter to make circles. Combine scraps of dough and use cutter until all dough is used up. Place circles on baking tray with enough space to spread.
  3. Bake about 14 minutes on top rack until golden and puffed, rotating pan halfway through. Let cool for 5 minutes. Serve.
