The tastiest 4-ingredient mini cheesecake

This delicious dessert is one of those amazingly simple treats that somehow tastes mouthwateringly good even though it includes barely any ingredients. It’s a fantastic recipe for serving up on those evenings when you’re craving something a bit different but don’t have the time or energy to cook!

Simply jump in the kitchen for ten minutes and throw the end result in the fridge to be enjoyed after dinner! Serve it up on its own or with a side of cream and some fresh fruits for something extra special. Yum!

Ingredients

  • 8 (75g) plain chocolate biscuits, broken into pieces
  • 1 orange
  • 250g cream cheese, chopped, at room temperature
  • 60ml (1/4 cup) sweetened condensed milk

Method

  1. Process biscuits in food processor until fine crumbs form. Transfer to a bowl. Clean the food processor.
  2. Finely grate the rind of half the orange. Use a zester to zest the remaining orange half. Juice the orange.
  3. Process the cream cheese, condensed milk, finely grated orange rind and 2 tablespoons of orange juice in the food processor until smooth.
  4. Divide the cream cheese mixture among 4 small serving glasses. Top with the biscuit crumbs and place in the fridge for 1 hour or until chilled. Top with the orange zest.
