The secret ingredient to a perfect coddled egg

Do you love the great flavour you enjoy when eating coddled eggs? This recipe is an easy way to get the same taste with some extra fun! A perfect breakfast that is quick, easy and great for when you have brunch guests!

Ingredients

  • 12 eggs
  • Ham off the bone
  • Diced tomatoes, mushrooms and red onion
  • Grated cheddar cheese
  • Salt and pepper

Method

  1. Spray each muffin well with nonstick spray.
  2. Place a slice of ham in the bottom of each muffin well. Place about a teaspoon or so of the diced vegetables on top of the ham.
  3. Sprinkle some shredded cheddar cheese over the tomatoes. Break one egg into each spot. Sprinkle a little bit of salt and pepper on each.
  4. Bake at 180 degrees Celsius for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.
