Ingredients
- 1/2 cup (100g) caster sugar
- 3/4 cup (165g) brown sugar, packed
- 1 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups (155g) plain flour
- 1/2 teaspoon bicarbonate of soda
- 110g milk or semi-sweet chocolate chunks
- 110g dark chocolate chunk, or your preference
Method
- Whisk caster sugar, brown sugar, salt and butter together in large bowl until smooth and free of lumps. Add egg and vanilla. Whisk together until smooth and soft.
- Next, sift in flour and bicarbonate of soda. Fold mixture with spatula, without over-mixing.Gently fold in chocolate chunks.
- Cover and place in refrigerator to chill at least 30 minutes or overnight for a more complex flavour.
- Preheat oven to 180°C. Line baking tray with baking paper. Use ice-cream scoop to scoop out dough onto tray. Leave about 10cm of room between cookies for spreading. Bake for 12-15 minutes, or until the edges have just started brown. Cool on wire rack. Serve.
