Absolutely delicious pork burgers and crispy wedges

There’s nothing quite like a homemade meal and these hearty burgers are fantastic for a low maintenance lunch or dinner option. They’re quick, easy, cheap and taste absolutely delicious – what’s not to love?

From adults to fussy grandkids, this is a great meal to cook for large crowds as almost everyone will enjoy the filling feast. Serve the burgers up alongside roasted wedges and you have yourself the perfect lunchtime meal. Cook a whole bunch of these patties in one go and you can even enjoy a delicious homemade burger every day of the week!

Ingredients

  • 3 large potatoes, cut into wedges
  • 1 red pepper, deseeded, cut into quarters
  • 1 tbsp vegetable oil, plus 1 tsp extra
  • 2 tsp dried mixed herbs
  • 500g pork mince
  • 3 garlic cloves, crushed
  • 2 tsp smoked paprika
  • 1 large egg
  • 4 tbsp mayonnaise
  • Fresh burger buns, lettuce and onion, to serve

Method

  1. Heat oven to 230C. Line baking tray with baking paper. Spread potatoes wedges on tray. Sprinkle red pepper, 1 tbsp oil and 1 tsp herbs over the top. Toss or stir to coat. Roast for 25 mins, turning halfway through, or until chips are golden and pepper is softened.
  2. Meanwhile, add mince, two-thirds of the garlic, paprika, egg, remaining herbs and seasoning to a bowl. Mix together using hands. Shape into 4 patties. Heat 1 tsp of oil in frying pan. Cook for 7-8 minutes on each side or until completely cooked through.
  3. Add mayonnaise to bowl with remaining garlic. Stir to combine.
  4. Season chips. Serve burgers in buns with lettuce, onion, red pepper and garlic mayo, along with chips.
