There’s nothing better than fresh seafood on the grill in summer! And if you’re on the hunt for something with a big flavour kick, you can’t go past these garlic and chilli prawn skewers. With just a handful of easy ingredients, they are destined to become a fixture at summer barbecues.

Ingredients
- 3 garlic cloves, finely chopped
- 1 long red chilli, seeded and finely chopped
- 2 tbsp olive oil
- 2 tsp lime juice
- 750g raw king prawns, peeled, deveined, tails intact
- Lime wedges, to serve
- Ready-made aioli or mayonnaise, to serve
- Salt flakes, to season
Method
- Place garlic, chilli, oil, lime juice, salt and pepper in a large non-metallic bowl and whisk until well combined. Add prawns and toss to coat evenly. Cover and leave to marinate in the fridge for 15 minutes.
- Heat barbecue grill plate to high. Remove prawns from marinade and thread onto metal or bamboo skewers (if using bamboo, soak in cold water for at least 30 minutes before adding prawns, to avoid burning skewers while cooking).
- Grill prawn skewers for 2 minutes each side or until prawns are cooked through and golden. Serve skewers with lime wedges, ready-made aioli or mayonnaise, if desired, and salt flakes.
