Light and easy banana and walnut muffins

If you’re looking for a light and easy afternoon tea snack to go alongside your cuppa, you can’t go past these mouthwatering banana and walnut muffins! With only a few easy ingredients and a method that is so easy that even the grandkids could whip them up — this recipe is basically perfect!

Although the end product is absolutely delicious, don’t be afraid of adding in some extra ingredients if you’re looking for something sweeter or to add some extra flavours. Chocolate chips or dried fruits are always a good idea, otherwise topping them off with a homemade glaze would also work wonders. Enjoy!


  • 3 large ripe bananas
  • 3/4 cup white sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 1/2 cups plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups chopped walnuts
  • 2 tbsp brown sugar
  • 1 tbsp melted butter


  1. Preheat oven to 180C and line 12-hole muffin tin with paper liners. Mash bananas in large bowl. Mix in sugar and egg with wooden spoon until well blended. Add vegetable oil and mix well. Add flour, baking powder, bicarb soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Mix together until flour disappears and walnuts are distributed evenly throughout batter.
  2. In small bowl, combine remaining walnuts, brown sugar and melted butter and mix until walnuts are coated.
  3. Spoon muffin batter evenly into muffin tin. Spoon coated walnuts onto top of each one, making sure topping is well distributed and not in one big clump or it might sink into the muffin as it bakes.
  4. Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the centre of one of the muffins comes out clean. Leave to cool for 5 minutes in tin before turning out onto wire rack to cool completely. Serve.
