Incredibly crispy sweet potato bake

This incredibly crispy sweet potato bake is an absolute winner.

A comforting and cheesy dish made with sweet potatoes and a garlic infused cream to tie it all together. Feel free to get adventurous with this by adding in different veggies!

It’s so incredibly easy to make and is absolutely ideal for bringing along to family get togethers or serving up next to a main meal.


  • 550g white or purple sweet potato, scrubbed or peeled, thinly sliced
  • 700g orange sweet potato, scrubbed or peeled, thinly slice
  • 2 tsp olive oil
  • 1 leek, trimmed, thinly sliced
  • 150g Creme Fraiche (can be found in supermarkets)
  • 150ml milk
  • 1 garlic clove, crushed
  • 1 tbsp chopped fresh sage
  • 55g parmesan, finely grated
  • 50g vintage cheddar, coarsely grated


  1. Preheat oven to 200C.
  2. Lightly grease a 6.5cm-deep, 20 x 30cm baking dish.
  3. Place the sweet potato in a large microwave-safe bowl with 60ml (1/4 cup) water.
  4. Cover with two sheets of plastic wrap. Cook in the microwave on high for 8 minutes. Remove and drain.
  5. Meanwhile heat the oil in a small non-stick frying pan over medium heat.
  6. Add the leek and cook, stirring, for 3 to 4 minutes. Remove from heat.
  7. Whisk together the creme fraiche, milk, garlic and sage in a jug. Season.
  8. Layer the sweet potato, leek, parmesan in the prepared dish until all ingredients have been used. Sprinkle with cheddar.
  9. Pour the milk mixture evenly over the top. Season with pepper.
  10. Bake for 35 to 40 minutes.
