This savoury dessert is a perfect way to end an afternoon gathering or dinner party with a surprise twist.
Bread pudding has always been a sweet and traditional eat, but this modern take on an old classic will update your meals to give you a fresh and tasty side dish or dessert. No more need for boring bread rolls!
Ingredients
- 1 sourdough loaf cut into 2cm cubes
- 1 tablespoon rosemary leaves, chopped
- 2 garlic cloves, crushed
- 1 tablespoon chives, chopped
- 1 cup grated cheddar cheese
- 2 tablespoons grated parmesan
- 4 eggs
- 1/2 cup cream
- 50g butter, melted
Method
- Preheat the oven to 180 degrees Celsius fan forced. Place half the sourdough cubes in a greased oven proof dish.
- Cover with chopped rosemary leaves, chopped garlic cloves, 1 teaspoon chives, 1/2 cup grated cheddar cheese and 1 tablespoon grated parmesan. Cover with the remaining cubes.
- In a fresh bowl, whisk eggs and cream. Pour over the bread covering all cubes.
- Allow to stand for 20 minutes. Scatter over 1/2 cup grated cheddar, 1 tablespoon parmesan and 1 teaspoon chopped chives.
- Drizzle over 50g melted butter. Bake for 30-35 minutes until golden.
