Searching for a wholesome and comforting dinner for one? This homemade chicken soup is not only a cleaner version than the packet mix, but it’s also so much more delicious and arguably even easier to make.
The best part of the whole meal is that there’s no need to deal with any leftovers or even many dishes at the end! Instead, you can whip this up in just 10 minutes and enjoy it fresh off the bat before washing up one single dish and heading off to bed!
Ingredients
- 20g dried egg noodles
- 125g can creamed corn
- 1/4 cup shredded cooked chicken or ham
- 1 teaspoon chicken stock powder
- Soy sauce, to season
- Chinese cooking wine, to season
- Sesame oil, to season
- Green shallots, sliced, to serve
Method
- Place noodles in a 430ml (1 3/4 cup)-capacity mug. Add 250ml (1 cup) water. Microwave on High for 4 minutes or until the noodles are tender.
- Stir in corn, chicken or ham and stock powder. Microwave on High for a further 30 seconds.
- Season with a dash of soy sauce and cooking wine, a few drops of sesame oil and pepper. Sprinkle with shallot to serve.
