Quick and simple vegetable fritters

These crispy treats are the absolute best way to enjoy a tasty dinner, as well as fitting in your daily serving of vegetables in a new and inventive way. And, thanks to their deliciously crispy exterior, these addictive fritters will ensure your grandkids don’t complain about eating their greens.

This recipe is also the perfect way for you to use up any leftover veggies you might need to get rid of, or even just a super budget-friendly option if you have to go and buy the ingredients. Serve these up with a fresh side salad and a small pot of dipping sauce such as salsa, yoghurt or chutney to really bring out all of the delicious flavours. Enjoy!

Ingredients

  • 2 eggs, lightly beaten
  • 1/2 onion, finely chopped
  • 1/4 cup finely chopped broccoli or cauliflower
  • 2 cups grated vegetables of your choice (zucchini, carrot, sweet potato, parsnip or potato)
  • 1/4 cup self-raising flour
  • 1/2 teaspoon curry powder
  • salt and cracked black pepper

Method

  1. Combine eggs, onion, broccoli and grated vegetables in large bowl. Add flour, curry powder, salt and pepper and mix until well combined.
  2. Heat some olive oil in non-stick frying pan over medium heat. Add heaped tablespoonfuls of egg mixture to pan. Cook in batches for 2-3 minutes each side or until golden. Serve.
