Mini coffee cake muffins

If you’re looking for a snack to go with your afternoon cup of tea or coffee today, this recipe for mini coffee cake muffins has you covered. Perfectly sweet with a light, crumbly topping, they are made to be the perfect coffee pairing for an afternoon pick-me-up and you’ll most likely have all the ingredients in the cupboard already. This recipe will make 16 mini muffins, so they’re ideal for if you’re having visitors, or you might just go back for seconds!



  • 1 cup plain flour
  • ¼ cup plus 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup butter, melted
  • 1 egg
  • ¼ cup plus 2 tablespoons milk
  • 1 teaspoon vanilla essence


  • 2 tablespoons plain flour
  • 1/3 cup sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons butter, melted


  1. Preheat oven to 175C.
  2. Grease a mini muffin tin with nonstick cooking spray.
  3. Combine flour, baking powder, sugar, and salt in a large mixing bowl. Add melted butter and mix until the mixture is crumbly. Add egg, milk, and vanilla and mix until combined.
  4. Divide mixture evenly into the mini muffin pan (it should fill approximately 16 muffins).
  5. For the crumble topping, combine flour, sugar, and cinnamon in a small bowl. Add the melted butter and mix until crumbly. Sprinkle mixture onto muffins until all used.
  6. Bake for 15 minutes. Allow to cool in the pan for 10 minutes before turning out onto cooling racks.
