Light and tasty lemon bread

This delicious, light and fresh morning tea snack is perfect to have alongside your cup of tea or coffee. One slice of this will be enough to satisfy your sweet tooth without going overboard and making you sick. You can top it off with a bit of lemon zest as garnish or leave it as is. This super simple recipe will easily become a family favourite and will have everyone heading back for seconds!

Ingredients

  • 125g butter, softened
  • 1 1/2 cups caster sugar
  • 1 large lemon, rind finely grated, juiced
  • 2 eggs
  • 1 1/2 cups self-raising flour, sifted
  • 1/2 cup milk

Method

  1. Preheat oven to 180°C. Grease and line a 6cm deep, 19cm x 10cm (base) loaf pan. Place 1 cup of sugar and rind in bowl. Use electric mixer to beat until light and fluffy. Add eggs, 1 at a time. Beat after each addition.
  2. Add half the flour and half the milk to the egg mixture. Gently stir mixture. Fold in remaining flour and milk. Pour mixture into prepared pan. Bake for 45-50 minutes until cooked through.
  3. Combine sugar and 1/3 cup of lemon juice in a bowl. Pour over hot loaf while still in pan. Leave to cool for 10 minutes. Slice and serve.
