Lemon coconut slice is a classic no-bake treat that’s always a hit at parties.
Simple and budget friendly, this homemade slice includes a delicious combination of coconut and lemon zest, layered in a tangy citrus icing. You can store in an air-tight container in the fridge or slice it up and take it to a family event. For the best results, try taking it out of the fridge 10 minutes before serving so it has a chance to soften a little.
Ingredients
- 400g shortbread
- 400g condensed milk
- 2 cups desiccated coconut
- 125g butter
- 1 lemon rind
- 2 cup icing sugar
- 30g butter
- 3 tbsp lemon juice
Method
- Butter a 20cm x 30cm slice tin with butter. Use a food processor to crush the biscuits.
- Place crushed biscuits, desiccated coconut, lemon rind and condensed milk in a large bowl.
- Melt butter and add to other ingredients, mix well. Press mixture into tray.
- To make icing, sift icing sugar into bowl and stir in butter.
- Add lemon juice one tablespoon at a time until icing is smooth.
- Spread slice with icing. Sprinkle an extra tablespoon of desiccated coconut on top of slice. Refrigerate until firm.
