Light and easy chocolate mousse

There’s nothing better than whipping up mousse for a quick and easy after-dinner treat – but the downside is, that it’s often not the healthiest of options. However, if you’re keeping a close eye on your sweet treats intake, go no further than this delicious recipe.

Instead of certain heavier ingredients, this light and easy recipe replaces them with chia seeds, coconut cream, and honey. All you have to do is mix it together and pop it in the fridge. Quickly whip this up in the afternoon to be ready to enjoy straight after dinner!

Ingredients

  • 400ml can of coconut cream
  • 5 tbsp good quality cocoa or cacao
  • 4 tbsp honey or rice malt syrup
  • 1 tsp vanilla bean paste or vanilla essence
  • 1 tsp cinnamon
  • 4 tbsp chia seeds
  • Mixed fruits, to serve
  • Chocolate shavings, to serve

Method

  1. Add all of the ingredients to large mixing bowl. Whisk together until completely combined.
  2. Spoon mixture into 6 small serving glasses. Place in fridge to chill for about 3 hours or until firm.
  3. Top with mixed fruits and chocolate shavings. Serve chilled.
