Almost everyone loves the deliciously sweet flavour of red velvet cupcakes but these cookie versions might be even better. These addictive, brightly coloured biscuits will easily become a crowd favourite thanks to their classic flavour with a bit of a twist. With a few white chocolate chips sprinkled through the mix, these eye-catching treats are perfect for serving up in the afternoon or morning tea or just popping in a jar and enjoying as your sweet snack throughout the week. Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 tbsp buttermilk
- 1 1/3 cup plain flour
- 1/2 tsp bicarbonate of soda
- 1 tsp cornflour
- 2 1/2 tbsp cocoa powder
- 1 tbsp red food colouring
- 1 cup white chocolate chips
Method
- Beat butter for about 1 minute or until light and fluffy. Add brown sugar and white sugar then beat again until well-creamed.
- Mix in egg, vanilla extract, salt and buttermilk. Add food colouring. Mix to combine. Set aside.
- In a separate bowl, mix flour, bicarb soda, cornflour, and cocoa powder. Stir to combine. Slowly add dry ingredients to wet ingredients. Stir to combine. Add white chocolate chips. Stir to combine. Cover the dough and chill in the fridge for at least 30 minutes.
- Preheat oven to 180C. Line two baking trays with baking paper. Scoop tablespoon servings of dough and roll into balls. Place on trays with room to spread. Bake for 10-12 minutes, or until slightly soft to the touch. Cool for 10 minutes. Serve.
