These cake-pops will be the hit of the Christmas parties this year! They are cute, stylish and totally delectable as they are made from a brandy-buttercream fruitcake mixture… totally divine!
Ingredients
- Pre-made fruitcake
- Buttercream
- Brandy
- Dark chocolate (meltable)
- Cooken (Vegetable fat)
- Paddle pop sticks
- Thick piece of polystyrene
- Ready rolled fondant icing, food colouring, cachous and lollies for decorating
Method
- Take the pre-made fruitcake and combine it with the buttercream by mashing them together in a large mixing bowl.
- When the mixture is a good, rich and sticky consistency, pour a little brandy into the bowl and mix thoroughly.
- Roll the mixture into small balls (about the size of a decent rum-ball) and pop them in the freezer on a lined tray for 20 minutes.
- While they are hardening in the freezer, melt some dark chocolate in the microwave with some cooken to make sure the chocolate smooth to the right consistency.
- Using some paddlepop sticks, stick them into the firm cake-ball and dip into the melted chocolate.
- Stand them in the polystyrene
- Use lollies, cachous and colourful fondant icing mixture to decorate the balls.
- Leave to stand for one hour and enjoy!
