Caramel apple sheet cake

As far as flavours go, caramel and apple are a dessert match made in heaven. From toffee apples, pies, and crumbles, this is a pairing you’ll find all over the place, simply because it works. This recipe combines a traditional tart apple cake with sticky, sweet caramel icing. It will be perfect if you’re getting a bit sick of chocolate sweets.

Ingredients

  • 2 cups flour plus 2 tablespoons flour
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • ½ cup butter
  • 1 cup water
  • ½ cup shortening
  • ½ cup buttermilk
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups peeled and chopped green apples
Icing
  • ½ cup butter
  • 6 tablespoons milk
  • 3½ cups icing powdered sugar
  • ½ teaspoon vanilla extract
  • ⅛ cup caramel topping

Method

  1. Combine flour, sugar and cinnamon in a large mixing bowl.
  2. In medium saucepan bring butter, water, and shorting to a boil. Remove from heat and add it to the flour mixture and stir to combine. Add buttermilk, then baking soda, then eggs, then vanilla, mixing in between each addition. Stir in apples.
  3. Pour into a 39x27cm  greased jam roll pan (or cookie sheet).
  4. Bake at 200C for 20 minutes and allow to cool for 10-15 minutes.
  5. Make icing by combining butter and milk in a medium mixing bowl. Microwave until butter is melted. Add icing sugar, vanilla, and caramel topping and mix until smooth. Pour icing evenly over the cooled cake.
