This recipe came from one of our community members who picked it up from some of her English friends in London. It’s a great way to explore different ways that people enjoy the season of good tidings, and this stuffing is apparently a delicious way to enjoy a Christmas turkey the “traditional English” way.

Ingredients
- 1 cup (6 thick slices) of coarsely processed 2 day old bread (grate if you don’t have a processor)
- 1 large onion, chopped
- 2 rashers of fatty bacon, chopped with rind removed
- 1 lemon (rind and juice)
- 1 stalk of celery finely chopped
- 1 cup of coarsely chopped fresh herbs like parsley, thyme, marjoram, sage and basil
- 1/2 cup chopped walnuts
- 500g sausage mince (pork and beef)
- 2-3 gherkins (finely chopped)
- 1/2 cup of cranberries (optional)
- 2 large eggs, beaten
- 1/2 cup dry sherry
- Salt, pepper and a little chicken seasoning
Method
- Mix the coarsely chopped ingredients together and add the lemon rind.
- Beat the eggs together with several tablespoons of lemon juice and the sherry.
- With clean hands mix together the sausage mince, coarse ingredients and liquid in a large bowl.
- Use to stuff the turkey, turkey breast or cook in a muffin tray for individual servings.
