This delicious slice combines the crunch of Weet-Bix and the sweetness of marshmallows, and is so easy to make with basic ingredients. It’s a perfect afternoon tea treat and is sure to be a hit with the grandkids – you can even add some sprinkles on top for their benefit. Store the slice in an airtight container in the fridge so the marshmallow filling stays springy and you can enjoy it with a cuppa all week.
Ingredients
- 3 Weet-Bix, crushed
- 1 cup desiccated coconut
- 1 cup self-raising flour
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 150g butter, melted
- 1/3 cup cold water
- 1 cup sugar
- 1/3 cup boiling water
- 1 tbsp gelatine
- food colouring, optional
Method
- Preheat the oven to 180°C.
- Grease a square slice pan and line with baking paper.
- Mix together the Weet-Bix, coconut, flour, brown sugar, vanilla and butter in a large bowl.
- Evenly press the mixture into the slice tin.
- Bake for 15 minutes.
- Make the marshmallow mixture by quickly whisking the cold water and sugar for three minutes.
- Mix together the boiling water and gelatine in a separate bowl with a fork.
- Add to the gelatine mixture to the marshmallow mixture and beat for eight minutes.
- Add food colouring, beating until the colour is even.
- Evenly spread the marshmallow mixture on top of the slice base and place in the fridge for an hour until set.
- Once set, cut the slice into squares and serve.
