Spinach and feta breakfast slice

This incredibly simple dish will easily become one of your all-time favourites to whip up for an easy and super healthy breakfast meal. With eggs, seed loaf and of course plenty of dark leafy greens, this quiche is stocked full of good, healthy ingredients that will keep you energised for the entire day. The best part about this tasty dish is how easy it is to bake, pop in airtight containers in the fridge and enjoy as lunch throughout the week. It’s both a great option for one person or a whole crowd of people so don’t worry if you feel like you’ve made too much because it will surely always be finished by someone!

Ingredients

  • 1 cape seed loaf
  • Olive oil cooking spray
  • 2 bunches English spinach, trimmed, rinsed
  • 200g feta cheese, crumbled
  • 3 green onions, chopped
  • 8 eggs
  • 1/2 cup thickened cream

Method

  1. Preheat oven to 180C. Grease a 4cm deep, 16cm x 26cm (base) slab pan.
  2. Cut eight 1.5cm-thick slices from loaf. Thin out each slice with a rolling pin until 5mm thick. Spray both sides with oil.
  3. Line pan with sliced bread, overlapping slightly. Bake for 10 minutes or until Lightly toasted.
  4. Meanwhile, place half the spinach in a microwave-safe dish. Cover. Microwave on HIGH (100%) for 1 1/2 to 2 minutes or until just wilted. Drain. Repeat with remaining spinach. Squeeze excess moisture from spinach with hands. Roughly chop.
  5. Arrange spinach evenly over bread base. Top with feta and green onion. Beat eggs, cream and salt and pepper together with a fork in a large bowl until well combined. Pour over spinach mixture. Bake for 35 to 40 minutes or until set. Cut into slices and serve.
