Ingredients

APPLE FILLING

  • 2.2kg apples
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • 2 tbsp freshly squeezed orange juice
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 cup raw sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg

THE CRUMBLE

  • 1.5 cups plain flour
  • 3/4 cup raw sugar
  • 3/4 cup brown sugar, packed
  • 1/2 tsp salt
  • 1 cup oats
  • 225g cold unsalted butter, diced

Method

  1. Preheat oven to 180C. Butter a 23cm x 36cm x  2cm baking dish.
  2. Peel, core and cut apples into large wedges.
  3. Combine apples with both zests, both juices, sugar and both spices. Pour into the dish.
  4. To make the topping, in a separate dish combine flour, sugars, salt, oats and cold butter. Mix on a low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over apples.
  5. Place dish on a sheet pan and back for 1 hour until top is brown and apples are bubbly.
