Mushroom stroganoff

Serve with a side of creamy mash.

While stroganoff is usually a meat-eaters dream, this version is packed with mushrooms instead for a hearty hit of veggies. The mushrooms are lovely and filling, while the sauce is full of flavour thanks to butter, marsala, a hint of paprika and sour cream for that smooth finish. Instead of the traditional pasta, serve with a side of mashed potatoes and a sprinkling of parsley. It’s a great comfort dish and the perfect thing to fill you up on a cool night. 

Ingredients

  • 3 onions, diced
  • 1 garlic, diced
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2 tablespoons marsala
  • 750g mushrooms
  • 1 tablespoon smoked paprika
  • 2 tablespoons tomato paste
  • 3 tablespoons sour cream

Method

1. Heat oil and butter in warmed frypan. Add onions and garlic and cook until soft. Add marsala and allow to cook for 10-15 minutes. Add mushrooms, cook until soft, then add paprika and tomato paste.

2. Prepare mashed potatoes. Just before serving, fold through sour cream. Serve mushroom sauce over pasta.
