Better for you peanut butter fudge

Fudge will always be a guilty pleasure because, although it tastes mouth-wateringly good, it’s definitely not a healthy choice. However, there are definitely a few ways to get around this. By replacing some of the heavier, fattier ingredients with more natural, lighter options, this recipe is the perfect way to enjoy the same delicious flavour of peanut butter fudge without all the bad stuff! With only four ingredients, this quick and easy dessert snack can be made in under 30 minutes. If you’re looking to give it a super sweet and salty flavour, feel free to add in extra sea salt and even it out with a teaspoon of vanilla extract. However, if you’re after something lighter, these ingredients will do perfectly!

Ingredients

  • 120g desiccated unsweetened coconut
  • 250g natural smooth peanut butter
  • 120ml melted coconut oil
  • 45-75ml maple syrup

Method

  1. Grease and line a standard loaf pan with baking paper.
  2. Add desiccated coconut to a food processor and blend until smooth and creamy. Scrape down sides as needed.
  3. Add peanut butter and melted coconut oil to the processor. Process together. Add 1 tablespoon of maple syrup at a time and process. Continue to add until the sweetness is at the desired level.
  4. Spoon mixture into prepared pan. Use the back of a spoon to even out the top. Place in the freezer to chill for about 15 minutes or until firm. Use a hot knife to slice the fudge into squares. Serve.
