Classic and simple caramel slice

This low-effort slice will forever be a hit with everyone who tries it. It’s a classic recipe that has stood the test of time because of how easy it is to make and how delicious it tastes when it’s done. This is definitely one that the grandkids will obsess over just as much as the adults and you’ll be surprised if there is any left over at the end of the day. Try this slice as a cheeky snack throughout the day or as a decadent dessert topped off with a scoop of vanilla ice cream. Yum!



  • 1 cup plain flour, sifted
  • 1/2 cup brown sugar
  • 1/2 cup desiccated coconut
  • 125g butter, melted


  • 395g can sweeten condensed milk
  • 2 tablespoons golden syrup
  • 60g butter, melted


  • 125g cooking chocolate, chopped
  • 60g copha, chopped (solid oil cooking block)


  1. Preheat oven to 180C. Line a 3cm deep, 28cm x 18cm lamington pan with baking paper. In a large bowl add flour, brown sugar, coconut and butter. Mix together well. Spoon into the prepared pan and press down to mould the base. Bake for 15-20 minutes until lightly golden. Remove from oven. Leave to cool.
  2. Meanwhile for filling, in a saucepan over medium heat, add condensed milk, golden syrup and butter. Whisk and cook for 8 minutes or until the mixture is golden. Pour over cooled base. Bake for 12 minutes or until filling is firm. Leave to cool completely. Chill for 3-4 hours in the refrigerator to completely set.
  3. For the topping, add chocolate and copha into a heat-proof bowl. Place bowl over a saucepan of simmering water. Stir the mixture until completely melted. Pour over caramel mixture. Chill in the refrigerator until completely set. Slice into squares. Serve.
