Delicious turkey and cranberry bagels

This is the perfect recipe to have up your sleeve come Christmas day.

Packed with flavour, this recipe uses minced turkey and leftover cranberry sauce to create a healthy and delicious meal — and it only takes 30 minutes to whip up! The ingredients are simple, but the flavours are huge, with plenty of fresh parsley, garlic and red onion packing a punch.

You can enjoy the patties as a tasty bagel sandwich or with a side of leftover roasted veggies.

Ingredients

  • 4 plain bagels, split and toasted
  • 500g turkey mince
  • 1 small red onion, chopped
  • 1/2 cup dried breadcrumbs
  • 2 tbsp cranberry sauce
  • 1 tbsp parsley, chopped
  • 1 egg
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • 4 tbsp cream cheese
  • 1 pack rocket
  • Plain flour

Method

  1. In a bowl, mix mince, onion, breadcrumbs, cranberry sauce, parsley, egg and garlic.
  2. Form into eight even-sized patties. Chill for 15 minutes.
  3. Heat oil in frying pan on medium heat.
  4. Dust patties in a plain flour, shaking off excess.
  5. Fry for five minutes, each side.
  6. Drain on paper towels
  7. spread cream cheese on bagels, and add patties, rocket, and cranberry sauce. Serve.
