Traditionally, breakfast treats such as pancakes and waffles have been known for being high in calories and carbs, but I’ve found a recipe that puts those worries to one side! These lactose-free, low-fat waffles are destined to become a regular treat in your house and are great for those managing diabetes. Enjoy!

Serves 2

Ingredients

  • 2 cups water
  • 1 1/5 cups rolled oats
  • 1/3 cup raw cashews
  • 1/2 tsp salt

Method

  1. Place all ingredients in a food processor or blender, and mix until well combined and slightly thickened.
  2. Fill the waffle maker to the desired level, close the lid and allow it to cook for 10-12 minutes. Do not open the lid before it’s finished, as waffles may tear.
  3. Serve hot or cold, with your favourite fresh berries and other seasonal fruit, or drizzle with honey and enjoy as a nutty treat.
