Traditionally, breakfast treats such as pancakes and waffles have been known for being high in calories and carbs, but I’ve found a recipe that puts those worries to one side! These lactose-free, low-fat waffles are destined to become a regular treat in your house and are great for those managing diabetes. Enjoy!

Ingredients
- 2 cups water
- 1 1/5 cups rolled oats
- 1/3 cup raw cashews
- 1/2 tsp salt
Method
- Place all ingredients in a food processor or blender, and mix until well combined and slightly thickened.
- Fill the waffle maker to the desired level, close the lid and allow it to cook for 10-12 minutes. Do not open the lid before it’s finished, as waffles may tear.
- Serve hot or cold, with your favourite fresh berries and other seasonal fruit, or drizzle with honey and enjoy as a nutty treat.
