Key lime cookies

This recipe is a delightful change to the typical cookies or key lime pies that we know and love. Why not try it for afternoon tea this week?

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups self-raising flour
  • 1/2 teaspoon salt
  • 1/4 cup fresh lime juice
  • 1 1/2 teaspoons grated lime zest
  • 1/2 cup icing sugar for decoration

Method

  1. Preheat oven to 175 degrees and grease cookie sheets.
  2. In a large bowl, mix together butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest.
  3. Combine the flour, baking powder, and salt; blend into the creamed mixture.
  4. Form the dough into 2cm balls, and arrange on the prepared cookie sheet.
  5. Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift icing sugar over cookies while still warm.
