Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 cans (28 ounces each) of crushed tomatoes
  • 1 cup vegetable broth
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese, for garnish
  • Fresh basil leaves, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. As the oil shimmers and releases its fragrant aroma, add the finely chopped onion and minced garlic. Sauté them until they turn soft and translucent.
  2. Pour in the crushed tomatoes and vegetable broth, stirring gently to combine. Allow the mixture to simmer.
  3. Add the chopped basil leaves to the pot, infusing the soup with its refreshing essence.
  4. Reduce the heat to low and let the soup simmer gently for about 20 minutes, allowing the flavours to meld and the ingredients to harmonise.
  5. Using an immersion blender or a regular blender (in batches), puree the soup until smooth and creamy. Be cautious while blending hot liquids, ensuring the lid is secured tightly.
  6. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste, adjusting the flavours to your preference.
  7. Reheat the soup over low heat, stirring occasionally, until it reaches the desired serving temperature.
  8. Ladle the soup into bowls, creating a canvas for garnishes. Sprinkle grated parmesan cheese on top, allowing it to melt and create a savoury, irresistible richness. Garnish with fresh basil leaves, adding a touch of elegance and a pop of vibrant green.
  9. Serve the soup hot, accompanied by crusty bread or crunchy croutons.
