Delectable ricotta cheesecake with figs

If you’re looking for a delicious dessert that will blow your guests away with its creamy texture and rich flavour, look no further than this baked ricotta cheesecake. Not only does it taste incredible, it’s also super-easy to make. This delectable recipe includes ricotta, with a touch of vanilla and a hint of fresh figs, all working together to create a mouth-watering flavour. And to really take this dessert to the next level, add a drizzle of honey over the top. Dig in!

Ingredients

  • 200g digestive biscuits
  • 75g unsalted butter, melted
  • 125g caster sugar, plus extra 2 tbsp
  • 650g ricotta
  • 1 tbsp cornflour
  • 1 tsp vanilla extract
  • 4 eggs, separated
  • 150ml sour cream
  • 8 figs, quartered

Method

  1. Preheat oven to 160C. Grease and line the base of a 23cm springform pan.
  2. Crush the biscuits in a food processor, then add the butter and the extra 2 tbsp of caster sugar and mix to combine. Press into prepared pan.
  3. Beat together with ricotta, 125g caster sugar, the cornflour, vanilla, egg yolks and sour cream.
  4. In a seperate bowl, beat the egg whites until stiff peaks form, then fold into the ricotta mixture.
  5. Pour over the base and bake for 50 to 60 minutes.
  6. Decorate with quartered figs when ready to serve.
