Hearty baked lasagne bowls

In need of some comfort food? Have a crack at this hearty (and healthy) lasagne in a bowl. It has layers of meat, sauce and cheese and will satisfy your hunger in no time!

This is the best recipe for one. It takes about 30 minutes to whip up, which makes it even more perfect if you’re looking for something quick for lunch or dinner. Given that it can also be frozen and reheats rather well, you can use it to plan your meals (if you can resist the temptation to eat it)!

Serves 4

Ingredients

  • 500g beef mince
  • 1/4 cup Parmesan cheese
  • 1 cup ricotta cheese (you can substitute for cottage cheese if you so desire)
  • 1/2 tsp garlic powder
  • 1/4 tsp Italian herbs
  • 1/4 tsp salt
  • 1 cup low-carb marinara sauce
  • 1 cup mozzarella cheese, shredded
  • Parsley, finely chopped (for garnish)

Method

  1. Preheat oven to 190C.
  2. In a skillet, brown the mince.
  3. Mix together Parmesan, ricotta, garlic powder, Italian herbs and salt.
  4. Gather four oven-proof bowls and in each add a layer of 1/4 of the mince, 1/4 of the marinara sauce, 1/4 of the cheese mix and about 1/4 of the mozzarella.
  5. Put the four bowls on a baking tray, place in oven and bake until cheese is melted (about 10 minutes).
  6. Garnish with parsley.
  7. Serve with a side of steamed vegetables and/or some garlic bread.
