The best steak with creamy peppercorn sauce

INGREDIENTS

FOR THE STEAK

  • 4 x 150g centre cut fillet steaks
  • 50g butter, at room temperature
  • Salt and freshly ground black pepper

FOR THE SAUCE

  • 100ml beef stock
  • 1/2 garlic clove, crushed
  • 2 tbsp brandy
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 150ml pint double cream
  • 1/2 tsp crushed black peppercorns

METHOD

  1. Use hands to flatten steaks to about 1 1/2cm in thickness. Season well with salt and pepper.
  2. Heat a large frying pan over high heat. Spread butter directly on the steak. Fry until cooked to your liking. Cover loosely with foil. Set aside and keep warm.
  3. Meanwhile, add stock to a saucepan over high heat. Bring to the boil. Cook until liquid has reduced by half. Add garlic, brandy, Worcestershire sauce, mustard, cream and peppercorns. Stir mixture. Bring to the boil. Season well with salt. Cook until mixture begins to thicken slightly.
  4. Transfer steaks to serving plates. Generously pour sauce over the top. Serve.
