Ingredients

  • 1 Granny Smith apple
  • 500g pork mince
  • 1 tbsp finely shredded sage
  • 1 cup (100g) fresh breadcrumbs (made from day-old bread)
  • 1 egg
  • 1/4 cup plain full cream yoghurt
  • 1/4 cup mayonnaise
  • 1 garlic clove
  • 1/2 tsp onion powder
  • 1 tbsp fresh dill, chopped

Method

  1. Peel, core and coarsely grate 1 apple. Place in a large bowl with the mince, sage, breadcrumbs and egg. Season well. Use your hands to mix until well combined. Divide the mixture into 12 even portions. Shape each portion into a rissole and place on a plate. Place in the fridge for 10 minutes to chill.
  2. Spray a large frying pan with olive oil spray and place over medium-high heat. Cook rissoles, in batches, for 3-4 minutes each side or until golden brown and cooked through. Transfer to a clean plate and cover to keep warm.
  3. In a small bowl, stir together the yoghurt, mayonnaise, garlic, onion powder and dill. Chill until ready to use.
  4. Serve pork and apple rissoles with the dill drizzled on top, or to the side.
